This is the go to burger at my house. I’m not sure how we came up with this, but if I had to guess it probably involved wine and me and the wife’s typical food conversations. It’s really the only burger we make around on the regular as we aren’t huge fans of ground beef. But we love this – so much so it was the inspiration to our southwest meatloaf.
The Fritos or Doritos give it this really great corn flavor throughout the burger. Throw in some jalapenos and cumin and it’s special. I’m serious. Such a hit when I make these for folks and really easy to put together for a crowd.
1 pound ground beef
1 egg yolk
1/2 bell pepper chopped
1/2 jalapeno chopped, fresh or pickled
1 tablespoon cumin
handful chopped fresh cilantro
1 – 2 teaspoons southwest seasoning, I like Mrs. Dash
1 cup crushed Fritos or Doritos
If you’re using a grill go and preheat that thing now. If you’re using a cast iron pan, pour some all in it and get that it hot.
Put all ingredients into a large bowl and gently combine and form into patties. Don’t mix to death, squeeze, or smash the daylights out of it. Just combine it. It’s ok if you see pieces that are not completely combined.
When grill/pan is hot, cook for 4 minutes on each side. Don’t touch it, move it, smash down in it, or even look at it. Set a timer and walk away. After 4 minutes, flip and set another timer for 4 minutes. Again, same instructions, leave it alone!
Boom! Cooked. This yields a burger with a slightly pink center, depending on thickness. If you like your burger more pink, reduce to 3 minutes. If you want a well done burger, increase to 5 minutes.
Put your favorite condiments on, nice pepper jack cheese if you like, maybe some avocado, and for all that is good and holy, use a great bun. Brioche is so nice with this. That slight sweetness of the bread with the burger makes for a great combination. A corn bun would be great to if you can find it.Yummy Southwest Burger! It's stupid good!Click To Tweet
